A rich and comforting Irish-style stew made with tender beef, hearty root vegetables, and the deep flavor of Guinness stout. This slow-cooked meal is perfect for chilly evenings and pairs wonderfully with warm soda bread or soft dinner rolls.
Ingredients
- 2 pounds beef chuck roast, cut into 1½-inch pieces
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 large carrots, peeled and sliced
- 3 celery stalks, sliced
- 1½ pounds Yukon Gold potatoes, cut into large chunks
- 2 tablespoons tomato paste
- 1 cup Guinness stout beer
- 3 cups beef stock
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 1 cup frozen peas
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Place the beef cubes in a large mixing bowl. Sprinkle with the flour, salt, and pepper, then toss until the meat is lightly coated.
- Warm the olive oil in a large skillet over medium-high heat. Add the beef and sear until browned on all sides. Transfer the browned beef to the slow cooker.
- In the same skillet, cook the onion and garlic for a few minutes until softened and aromatic.
- Mix in the tomato paste and cook briefly, stirring constantly.
- Pour the Guinness into the skillet and scrape the bottom to loosen any flavorful browned bits. Stir in the beef stock, Worcestershire sauce, thyme, rosemary, and bay leaves.
- Pour this mixture over the beef in the slow cooker.
- Add the carrots, celery, and potatoes. Stir gently to distribute the ingredients evenly.
- Cover and cook on Low for about 8 hours or High for 4 to 5 hours, until the beef is tender and the vegetables are cooked through.
- During the final 15 minutes of cooking, stir in the frozen peas and allow them to heat through.
- Discard the bay leaves before serving. Sprinkle with fresh parsley and enjoy while hot.
