Slow Cooker Irish Guinness Beef Stew with Potatoes and Garden Vegetables

A rich and comforting Irish-style stew made with tender beef, hearty root vegetables, and the deep flavor of Guinness stout. This slow-cooked meal is perfect for chilly evenings and pairs wonderfully with warm soda bread or soft dinner rolls.

Ingredients

  • 2 pounds beef chuck roast, cut into 1½-inch pieces
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 4 large carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 1½ pounds Yukon Gold potatoes, cut into large chunks
  • 2 tablespoons tomato paste
  • 1 cup Guinness stout beer
  • 3 cups beef stock
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Place the beef cubes in a large mixing bowl. Sprinkle with the flour, salt, and pepper, then toss until the meat is lightly coated.
  2. Warm the olive oil in a large skillet over medium-high heat. Add the beef and sear until browned on all sides. Transfer the browned beef to the slow cooker.
  3. In the same skillet, cook the onion and garlic for a few minutes until softened and aromatic.
  4. Mix in the tomato paste and cook briefly, stirring constantly.
  5. Pour the Guinness into the skillet and scrape the bottom to loosen any flavorful browned bits. Stir in the beef stock, Worcestershire sauce, thyme, rosemary, and bay leaves.
  6. Pour this mixture over the beef in the slow cooker.
  7. Add the carrots, celery, and potatoes. Stir gently to distribute the ingredients evenly.
  8. Cover and cook on Low for about 8 hours or High for 4 to 5 hours, until the beef is tender and the vegetables are cooked through.
  9. During the final 15 minutes of cooking, stir in the frozen peas and allow them to heat through.
  10. Discard the bay leaves before serving. Sprinkle with fresh parsley and enjoy while hot.
